Frugal ground beef stuffed pepper recipe has been a staple in this house forever. I usually make this dish in the winter. As I plan my summer garden I keep in mind what I want to freeze for winter. Peppers are one of those vegetables that make the list. When they are harvested, I cut them, or cut the tops off and clean out the seeds to use in a future recipe. They go great into so many recipes’. These little wonders are great add-in’s just like onion’s . More about onions in another recipe, but they are easily frozen also.
Green peppers are my favorite. I do like the red peppers as well as the yellow, so when I know I will be making my ground beef stuffed pepper recipe I get or grow a variety. Likewise I grow other vegetables like onions to go in my ground beef mix. Without a doubt, here is my delicious and frugal recipe for this wonderful, delicious, frugal and filling dinner. Enjoy!
Ingredients and Supplies
1 can of Campbell’s tomato soup
1 cup sour cream
1 cup colby jack cheese
1 lb. ground beef
2 cups cooked rice
1 can of kidney or black beans
Salsa or Queso or topping
2 tsp. garlic, beef bouillon cube, 1/2 onion chopped and 2 TBSP of soy sauce.
2 tsp. of cumin
2 tsp of cilantro leaves
cayenne pepper (a dash or two for spicy flavor)
6 bell peppers (any color or variety)
Preparation Steps for Ground Beef Stuffed Peppers
First, preheat the oven to 350 degrees. Cut the tops off of the bell peppers and rinse out the seeds. Second, cook the ground beef and flavor with the garlic. Add in 1 cup of water to help with moisture. Simmer for 2 minutes on low.
Third, add in all of the seasonings once the ground beef is cooked. Drain the fat.
Fourth, mix the cheese, sour cream, tomato soup, onions, and soy sauce together. Melt the beef bouillon cube and add to the ground beef. Stir well.
Using a spoon add to the green peppers. Place them close together so that they do not fall over and lose their stuffing. Add foil over the top. Place into the oven and cook for 25 minutes.
Upon removal from the oven, remove the aluminum foil, and add salsa or queso with Cilantro leaves to the top for a garnish.
Hints and Tips to Include
My first hint when making this delectable fall recipe is to sauté the onions and garlic first. Do this before cooking the ground beef. After that they are easy to incorporate into the mixture. After the ground beef is cooked add in all of the seasonings.
Hint number two is to save the cold stuff for last. I add my sour cream, cheese and tomato soup last. These ingredients are easy to cook in the 25 minute time frame. When it comes to my bell pepper preference I do not like all of the ingredients to look soupy, so that is why I add it in last.
Finally, great side dishes and accompaniment is to include garlic toast and tuscan tomato salad. Both are great frugal choices. In addition to these dishes another idea is to try garlic breadsticks with a caesar salad. Likewise roasted parmesan asparagus goes well as a frugal side dish to add with the stuffed bell peppers.
Leftover Ideas to Try
Usually after I make our stuffed peppers for a dinner meal we will have some of the stuffing left. My goal is to use this as leftover’s for lunch. Burrito’s or taco’s have been an easy go to lunch with the stuffed pepper filling. The rice and beans go well in the burrito or taco. Another idea would be to add the filling over the top of nachos.
Stuffed bell peppers have been a meal staple since I was a kid. Of course every one has a different recipe and filling they add. Clearly this is an easy meal that families love. Primarily I do make this recipe in the fall because it is cozy. Just like chili and other soup’s that warm you on rainy, windy nights when it begins to get dark early.
